Simnel cake

It is a cake that is made with fruit and nuts. Similar to the typical Christmas cake, but unlike that required several weeks of preparation, the Simnel cake is easier. It is decorated with marzapán and little eggs, chicks and other embellishments typical of spring and Easter. And with 11 marzapan balls representing the 11 apostles I traditionally (all except Judas), although
I do not follow that tradition. I prefer cheerful ornaments.


Tarta típica en Pascua en Inglaterra INGRDIENTS
    • 175g/6oz butter or margarine

  • 175g/6oz soft brown sugar

  • 3 free-range eggs, beaten

  • 175g/6oz plain flour

  • Pinch salt

  • ½ tsp ground mixed spice (optional)

  • 350g/12oz mixed raisins, currants and sultana

  • 55g/2oz chopped mixed peel

  • ½ lemon, grated zest only

  • 1-2 tbsp apricot jam

  • 1 free-range egg, beaten for glazing


VOCABULARY: NUTS= FRUTOS SECOS, SEVERAL=VARIOS, cheerful ornaments= ADORNOS ALEGRES.
